Can you describe a little bit better your environment?
Cluster? Are you upgrading the clients too?
I'd recommend going to 8.5.1 like someone said. You are not going to found any particular problem. You might have to reboot at the end of the installation which is new for me.
If you have another server and it's version 6, it0s really important to remove all the templates from the server (Or create a new ID but I don't like to mess up with that) so they won't replicate.
You need to upgrade your Admin Client and names first, as always. And at the end, run these maintenance tasks (All of these with the server offline):
updall -R names.nsf
updall -R -t $Users names.nsf
updall -R -t $Servers names.nsf
(Redundant but I do it anyway since it's recommended)
and then a final fixup for all the databases. I like to do this with the server offline too so the new binaries could check the databases, otherwise it would likely be done by the server and it will take a long time. Keep in mind that if you have a lot of databases. Better safe than sorry.
I upgraded a lot of servers and so far no problems.
